Smoked Whole Chicken

Equipment

  • Pellet Grill/Smoker
  • 1 Pan for the Chicken
  • 1 Roasting Rack

Ingredients
  

  • 1 Whole Chicken, giblets removed 3.5lb chicken was used for this recipe
  • 1 stalk of celery roughly chopped
  • 2 tbsp olive oil
  • 1 tbsp smoked paprika
  • 1 bay leaf
  • 1 tsp salt regular, sea salt or Himalayan
  • 1/2 tsp white pepper black pepper works too

Instructions
 

  • Prepare the grill/smoker and set at 350'F
  • Combine the seasonings in a small bowl.

  • Remove the giblets from the chicken. Pat dry with a paper towel.
  • Place chopped celery and whole bay leaf into the cavity of the chicken.
  • Rub chicken with olive oil. Evenly spread the seasoning mix over the entire chicken, leaving a small amount for the cavity as well. Place on a roasting rack over a baking dish. Fill the bottom of the pan with water, about 2 cups.
    Raw Chicken Ready To Become Smoked Whole Chicken
  • Place baking dish over indirect heat. Cook at 350'F for 2.5-3.5 hours, depending on the size of the chicken.
  • Check the chicken for doneness by inserting an instant thermometer into the breast - it should read 165'F. Then check the thigh - it should be 175'F or higher.
  • Once the chicken is done, remove from the heat and loosely cover it with foil. Let it rest at least 15 minutes before carving. Then, enjoy!
