1Whole Chicken, giblets removed 3.5lb chicken was used for this recipe
1stalk of celeryroughly chopped
2tbspolive oil
1tbsp smoked paprika
1bay leaf
1tspsaltregular, sea salt or Himalayan
1/2tspwhite pepperblack pepper works too
Instructions
Prepare the grill/smoker and set at 350'F
Combine the seasonings in a small bowl.
Remove the giblets from the chicken. Pat dry with a paper towel.
Place chopped celery and whole bay leaf into the cavity of the chicken.
Rub chicken with olive oil. Evenly spread the seasoning mix over the entire chicken, leaving a small amount for the cavity as well. Place on a roasting rack over a baking dish. Fill the bottom of the pan with water, about 2 cups.
Place baking dish over indirect heat. Cook at 350'F for 2.5-3.5 hours, depending on the size of the chicken.
Check the chicken for doneness by inserting an instant thermometer into the breast - it should read 165'F. Then check the thigh - it should be 175'F or higher.
Once the chicken is done, remove from the heat and loosely cover it with foil. Let it rest at least 15 minutes before carving. Then, enjoy!
